Cheesy Potato and Sausage casserole.
Ingredients:
- 3 cups potatoes, we used russet potatoes. Cubed, and boiled till tender
- 4 TBSP butter
- 4 TBSP flour
- 2 cups milk

- 1/2 TSP salt
- 1/4 TSP pepper
- 1/4 TSP pepper
- 1/2 lb Velveeta cheese, diced
- 1/2 cup sharp cheddar cheese, shredded
- 1 lb pork sausage or smoked (we used pork)
1/8 TSP paprika

Brown your sausage. Meanwhile put cooked/cubed potatoes in a 2 quart casserole dish. Add cooked meat and mix together.
Mix all remaining ingredients (except the sharp cheddar and paprika) in a sauce pan over medium heat. Stir constantly until melted and smooth.
Pour sour mixture over potatoes and sausage. Sprinkle sharp cheddar over top, then sprinkle paprika.
Preheat over 350. Cook for 30-35 minutes. Should be golden brown on top.
